After three attempts at the following recipe, I finally figured it out and – hands down – a good goma-ae is better than a traditional spinach salad.
Aside from having to hand-mash sesame seeds (and that wasn’t even to completion), it was a fantastically easy recipe and a bunch of spinach can disappeared so quickly!
* 1 bunch spinach (about 1 lb.)
* 2 tbsp roasted white sesame
* 1 tbsp white wine
* 1 tbsp sugar
* 1 tsp light soy sauce (seasoned OK)
Preparation : Wash and boil spinach. Drain the water very well. Coarsely chop the spinach. Dry roast the sesames and crush/grind to a powder. Add sugar, soy sauce, and wine to sesame and mix well. Add spinach and stir well. Makes 4 servings.
